40ml White rum
15ml Elderflower liqueur
Handful of pomegranate arils
10ml Lime juice
2tsp Simple syrup
Mint
10ml Pomegranate juice
Double Dutch Pomegranate & Basil

Collins glass
Spirits jiggercocktail shaker
Cocktail muddler

Method

Muddle 1 tbsp of pomegranate arils in the bottom of a collins glass and then fill with ice. Take your cocktail shaker and fill with plenty of ice followed by 40ml white rum
Take your cocktail shaker and fill with plenty of ice followed by 40ml white rum, 15ml elderflower liqueur, 10ml lime juice and a dash of pomegranate juice
Shake well until chilled. Pour into a Collins glass and top with Double Dutch Pomegranate & Basil. Garnish with a few pomegranate arils and a sprig of mint
